- Cherry tomatoes - 200 grams, halved
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
Steps
- In a bowl, combine olive oil, minced garlic, chopped rosemary, thyme, red wine vinegar, salt, black pepper, and lemon juice to create a marinade.
- Add the wild boar loin to the marinade, ensuring it is well coated. Cover and marinate in the refrigerator for at least 2 hours, or overnight for best flavor.
- Preheat the grill to medium-high heat.
- Remove the wild boar from the marinade and let excess marinade drip off. Reserve the marinade for basting.
- Grill the wild boar loin for about 6-8 minutes on each side, basting with reserved marinade, until it reaches an internal temperature of 60°C (140°F) for medium-rare.
- While the boar is grilling, toss the cherry tomatoes, zucchini, and bell pepper with a drizzle of olive oil, salt, and pepper, then grill them alongside the meat for about 5-7 minutes until tender and slightly charred.
- Once the wild boar is cooked, remove it from the grill and let it rest for 5 minutes before slicing.
- Serve the sliced wild boar with the grilled vegetables on the side.
