Steps

  1. Wash the chicory thoroughly and remove any tough stems.
  2. Peel the potatoes and cut them into small cubes.
  3. In a large pot, bring salted water to a boil and add the potato cubes. Cook for about 10 minutes or until just tender.
  4. Add the chicory to the pot with the potatoes and cook for an additional 5 minutes until the chicory is wilted.
  5. Drain the potatoes and chicory, and set them aside.
  6. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  7. Add the drained potatoes and chicory to the skillet, seasoning with salt, black pepper, and red pepper flakes. Stir gently to combine and cook for another 5 minutes, allowing the flavors to meld.
  8. Remove from heat and drizzle with lemon juice before serving.
