Steps
- Wash the chicory thoroughly under cold water and remove any tough stems. Chop it into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped chicory to the skillet and cook for about 5-7 minutes, stirring occasionally until it is wilted and tender. Season with salt and black pepper to taste.
- Create four small wells in the wilted chicory and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are set to your liking.
- If desired, sprinkle grated Parmesan cheese over the top before serving. Serve warm as a healthy snack or light meal.
