Steps
- Wash the chicory thoroughly and remove any tough stems, then roughly chop it into bite-sized pieces.
- In a large skillet, heat the extra virgin olive oil over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the chopped chicory to the skillet, stirring well to coat it in the oil and garlic.
- Sauté the chicory for about 5-7 minutes, or until it becomes tender but still vibrant in color.
- Stir in the sliced black olives and red pepper flakes (if using), cooking for an additional 2-3 minutes.
