Steps
- Rinse the chicory thoroughly under cold water to remove any dirt or grit, then drain well.
- In a large pot, bring water to a boil and add a pinch of salt.
- Add the chicory to the boiling water and blanch for 2-3 minutes until slightly tender but still vibrant green.
- Drain the chicory and immediately transfer it to a bowl of ice water to stop the cooking process. Let it cool for a few minutes, then drain again.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the blanched chicory to the skillet and toss to coat with the garlic and oil.
- Squeeze the fresh lemon juice over the chicory and season with salt and black pepper. Stir well and cook for an additional 2-3 minutes until heated through.
- Remove from heat and serve warm as a side dish.
