  • Chicory - 200 grams
  • Olive oil - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the chicory thoroughly under cold water to remove any dirt or grit, then drain well.
  2. In a large pot, bring water to a boil and add a pinch of salt.
  3. Add the chicory to the boiling water and blanch for 2-3 minutes until slightly tender but still vibrant green.
  4. Drain the chicory and immediately transfer it to a bowl of ice water to stop the cooking process. Let it cool for a few minutes, then drain again.
  5. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
  6. Add the blanched chicory to the skillet and toss to coat with the garlic and oil.
  7. Squeeze the fresh lemon juice over the chicory and season with salt and black pepper. Stir well and cook for an additional 2-3 minutes until heated through.
  8. Remove from heat and serve warm as a side dish.
