  • Pork shoulder - 500 grams
  • Pork fatback - 200 grams
  • Salt - 15 grams
  • Black pepper - 5 grams
  • Dried thyme - 1 teaspoon
  • Bay leaves - 2
  • Garlic - 3 cloves, crushed
  • Water - 250 ml

Steps

  1. Cut the pork shoulder and pork fatback into small cubes, about 2 cm each.
  2. In a large pot, combine the pork cubes, salt, black pepper, thyme, bay leaves, crushed garlic, and water.
  3. Bring the mixture to a boil over medium heat, then reduce to low heat and simmer for about 2 to 3 hours, stirring occasionally, until the meat is tender and the fat has rendered.
  4. Remove the pot from heat and let it cool slightly before draining off excess liquid.
  5. Transfer the mixture to a food processor and pulse until it reaches a chunky spreadable consistency.
  6. Spread the mixture into a shallow dish and let it cool completely to set.
  7. Once set, cut into squares or serve as a spread with crusty bread.
