Steps
- Cut the pork shoulder and pork fatback into small cubes, about 2 cm each.
- In a large pot, combine the pork cubes, salt, black pepper, thyme, bay leaves, crushed garlic, and water.
- Bring the mixture to a boil over medium heat, then reduce to low heat and simmer for about 2 to 3 hours, stirring occasionally, until the meat is tender and the fat has rendered.
- Remove the pot from heat and let it cool slightly before draining off excess liquid.
- Transfer the mixture to a food processor and pulse until it reaches a chunky spreadable consistency.
