Ingredients

  • Pork belly - 250 grams
  • Pork shoulder - 150 grams
  • Lard - 50 grams
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red wine - 100 ml
  • Lemon zest - 1 teaspoon

Steps

  1. Cut the pork belly and pork shoulder into small cubes, about 2 cm in size.
  2. In a large pot, melt the lard over medium heat and add the pork cubes, browning them on all sides.
  3. Add the minced garlic, chopped rosemary, salt, and black pepper to the pot, stirring to combine.
  4. Pour in the red wine and bring the mixture to a gentle simmer.
  5. Cover the pot and reduce the heat to low, allowing the meat to cook for about 2 hours until tender.
  6. Once cooked, remove the lid and let the mixture simmer for an additional 30 minutes to reduce the liquid.
  7. Stir in the lemon zest and mix well. Remove from heat and let cool slightly.
  8. Transfer the ciccioli to a serving dish and serve warm with crusty bread or crackers.
