- Pork belly - 250 grams
- Pork shoulder - 150 grams
- Lard - 50 grams
- Garlic - 3 cloves, minced
- Fresh rosemary - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red wine - 100 ml
- Lemon zest - 1 teaspoon
Steps
- Cut the pork belly and pork shoulder into small cubes, about 2 cm in size.
- In a large pot, melt the lard over medium heat and add the pork cubes, browning them on all sides.
- Add the minced garlic, chopped rosemary, salt, and black pepper to the pot, stirring to combine.
- Pour in the red wine and bring the mixture to a gentle simmer.
- Cover the pot and reduce the heat to low, allowing the meat to cook for about 2 hours until tender.
- Once cooked, remove the lid and let the mixture simmer for an additional 30 minutes to reduce the liquid.
- Stir in the lemon zest and mix well. Remove from heat and let cool slightly.
- Transfer the ciccioli to a serving dish and serve warm with crusty bread or crackers.
