Ingredients

  • Zucchini - 2 medium-sized
  • Canned chickpeas - 240 grams, drained and rinsed
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 10 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Using a spiralizer, create zoodles from the zucchini and set aside.
  2. In a large skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant (about 1 minute).
  3. Add the rinsed chickpeas to the skillet, and cook for 5 minutes, stirring occasionally.
  4. Stir in the halved cherry tomatoes, salt, black pepper, and red pepper flakes (if using), cooking for another 5 minutes until the tomatoes soften.
  5. Add the zoodles to the skillet and toss gently with the chickpeas and tomatoes, cooking for an additional 3-4 minutes until the zoodles are just tender.
  6. Remove from heat and stir in the chopped basil and grated Parmesan cheese before serving.
