Steps
- In a mixing bowl, combine the chickpea flour and salt, making a well in the center.
- Crack the eggs into the well and add the olive oil.
- Using a fork, gradually incorporate the flour into the eggs until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. If the dough is too dry, add water, one tablespoon at a time.
- Wrap the dough in plastic wrap and let it rest for 15 minutes.

- Bring a pot of salted water to a boil and cook the tagliatelle for 3-4 minutes until they float to the surface.
