Ingredients

  • Chickpea flour - 150 grams
  • Eggs - 2 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Water - 2 tablespoons (if needed)
  • Fresh basil - for garnish
  • Parmesan cheese - for serving (optional)

Steps

  1. In a mixing bowl, combine the chickpea flour and salt, making a well in the center.
  2. Crack the eggs into the well and add the olive oil.
  3. Using a fork, gradually incorporate the flour into the eggs until a dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes until smooth. If the dough is too dry, add water, one tablespoon at a time.
  5. Wrap the dough in plastic wrap and let it rest for 15 minutes.
  6. After resting, roll out the dough on a floured surface to a thickness of about 1-2 mm.
  7. Cut the rolled dough into strips to form tagliatelle (about 1 cm wide).
  8. Bring a pot of salted water to a boil and cook the tagliatelle for 3-4 minutes until they float to the surface.
  9. Drain the pasta and serve with your choice of sauce, garnished with fresh basil and Parmesan cheese if desired.
