- Chicken breast - 300 grams
- Almond flour - 50 grams
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Garlic - 2 cloves, minced
- Chicken broth - 120 ml
- Fresh lemon juice - 2 tablespoons
- Capers - 1 tablespoon, rinsed
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Slice the chicken breasts in half horizontally to create two thinner pieces. Season both sides with salt and black pepper.
- Dredge the chicken pieces in almond flour, shaking off any excess.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter is melted, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth, lemon juice, and capers. Bring to a simmer and let it cook for 3-4 minutes to reduce slightly.
- Return the chicken to the skillet, coating it well with the sauce. Cook for an additional 2 minutes to heat through.
- Remove from heat, garnish with chopped parsley, and serve immediately.
