Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 50 grams
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Chicken broth - 120 ml
  • Fresh lemon juice - 2 tablespoons
  • Capers - 1 tablespoon, rinsed
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Slice the chicken breasts in half horizontally to create two thinner pieces. Season both sides with salt and black pepper.
  2. Dredge the chicken pieces in almond flour, shaking off any excess.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter is melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth, lemon juice, and capers. Bring to a simmer and let it cook for 3-4 minutes to reduce slightly.
  6. Return the chicken to the skillet, coating it well with the sauce. Cook for an additional 2 minutes to heat through.
  7. Remove from heat, garnish with chopped parsley, and serve immediately.
