Ingredients

  • Chicken breast - 2 pieces (200g each)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Butter - 2 tablespoons
  • Mushrooms (sliced) - 150g
  • Garlic (minced) - 2 cloves
  • Marsala wine - 120ml
  • Chicken broth - 60ml
  • Fresh parsley (chopped) - 1 tablespoon

Steps

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.
  3. Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove and set aside.
  4. In the same skillet, add the remaining olive oil and butter. Once melted, add the sliced mushrooms and sauté for about 5 minutes until they are browned.
  5. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  6. Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to deglaze. Allow it to simmer for about 5 minutes until the sauce slightly thickens.
  7. Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes until heated through.
  8. Garnish with chopped parsley before serving.
