Ingredients
- Chicken breast - 2 pieces (200g each)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Butter - 2 tablespoons
- Mushrooms (sliced) - 150g
- Garlic (minced) - 2 cloves
- Marsala wine - 120ml
- Chicken broth - 60ml
- Fresh parsley (chopped) - 1 tablespoon
Steps
- Season the chicken breasts with salt and black pepper on both sides.
- In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.
- Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove and set aside.
- In the same skillet, add the remaining olive oil and butter. Once melted, add the sliced mushrooms and sauté for about 5 minutes until they are browned.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to deglaze. Allow it to simmer for about 5 minutes until the sauce slightly thickens.
- Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes until heated through.
- Garnish with chopped parsley before serving.
