  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Canned diced tomatoes - 400 grams
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Red wine vinegar - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and black pepper, then add them to the skillet, browning them for about 5 minutes on each side until golden brown.
