- Zucchini - 2 medium
- Chicken breast - 300 grams
- Olive oil - 2 tablespoons
- Heavy cream - 120 milliliters
- Parmesan cheese - 50 grams, grated
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Italian seasoning - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles. Set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breast with salt, pepper, and Italian seasoning.
- Add the chicken breast to the skillet and cook for about 5-7 minutes on each side, or until the internal temperature reaches 75°C. Remove from the skillet and let it rest.
- In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
- Pour in the heavy cream and bring to a simmer, stirring frequently. Add the grated Parmesan cheese and continue to stir until the sauce thickens slightly, about 3-5 minutes.
- While the sauce is thickening, slice the cooked chicken breast into strips.
- Add the zoodles to the sauce and toss gently to coat them with the Alfredo sauce. Cook for 2-3 minutes until the zoodles are slightly softened.
- Plate the zoodles and top with sliced chicken. Garnish with chopped parsley and additional Parmesan cheese if desired.
