Ingredients

  • Celeriac - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 teaspoon

Steps

  1. Peel the celeriac and slice it into thin, tagliatelle-like ribbons using a vegetable peeler or a mandoline.
  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the celeriac ribbons to the skillet and season with salt and black pepper. Sauté for about 5-7 minutes until just tender.
  4. Reduce the heat to low, pour in the heavy cream, and stir well to combine. Allow it to simmer for 2-3 minutes until the cream slightly thickens.
  5. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with more salt and pepper if needed.
  6. Finish with a squeeze of lemon juice and sprinkle chopped parsley on top.
  7. Serve immediately, garnished with extra Parmesan if desired.
