Ingredients

  • Celeriac - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Canned crushed tomatoes - 400 grams
  • Fresh basil - 10 grams, chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Peel the celeriac and cut it into spaghetti-like noodles using a spiralizer or a vegetable peeler.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant (about 1 minute).
  3. Add the canned crushed tomatoes to the skillet and stir in the chopped basil, salt, black pepper, and red pepper flakes (if using).
  4. Simmer the sauce for 10-15 minutes, allowing it to thicken and the flavors to meld.
  5. While the sauce is simmering, bring a separate pot of salted water to a boil and blanch the celeriac noodles for 3-4 minutes until tender but still firm.
  6. Drain the celeriac noodles and add them to the skillet with the sauce, tossing to combine.
  7. Serve hot, garnished with grated Parmesan cheese and additional fresh basil if desired.
