  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Canned tomatoes - 400 grams, crushed
  • Black olives - 50 grams, pitted and chopped
  • Capers - 2 tablespoons, rinsed
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Peel the celeriac and spiralize it using a spiralizer or cut it into thin strips to create 'pasta'.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the crushed tomatoes to the skillet and stir well. Allow the mixture to simmer for about 10 minutes, stirring occasionally.
  4. Stir in the chopped olives, capers, and red pepper flakes (if using). Season with salt and black pepper to taste.
  5. Add the spiralized celeriac to the skillet, tossing to combine with the sauce. Cook for an additional 5-7 minutes until the celeriac is tender but still has a slight bite.
  6. Remove from heat and stir in chopped parsley. Serve immediately.
