  • Black pepper - 1/2 teaspoon
  • Fresh rosemary (optional) - 1 tablespoon, chopped

Steps

  1. In a mixing bowl, combine the chickpea flour, sea salt, and black pepper.
  2. Gradually whisk in the water until the mixture is smooth and free of lumps.
  3. Let the batter rest for 15 minutes to allow the flour to hydrate.
  4. Preheat the oven to 220°C (428°F) and place a baking sheet or a cast-iron skillet inside to heat up.
  5. After the batter has rested, carefully remove the hot baking sheet from the oven and drizzle 1 tablespoon of olive oil onto it.
  6. Pour the batter onto the hot baking sheet, spreading it evenly with a spatula.
  7. Drizzle the remaining tablespoon of olive oil on top and sprinkle with fresh rosemary if using.
  8. Bake in the oven for about 20 minutes, or until the edges are golden and crispy.
  9. Remove from the oven, let it cool slightly, then cut into wedges and serve warm.
