  • Fresh rosemary - 1 tablespoon, chopped
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a mixing bowl, combine the chickpea flour, salt, and black pepper.
  2. Gradually add the water while whisking until you achieve a smooth batter.
  3. Stir in the chopped rosemary and let the batter rest for 15 minutes.
  4. Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.
  5. Pour 1 tablespoon of olive oil onto the baking sheet and spread it evenly.
  6. Pour the batter onto the baking sheet, spreading it into an even layer about 5 mm thick.
  7. Drizzle the remaining olive oil on top and sprinkle with grated Parmesan cheese if using.
  8. Bake in the preheated oven for 20 minutes or until golden brown and crispy.
  9. Remove from the oven, let it cool slightly, and cut into squares or triangles.
