- Carrot - 1 medium, diced
- Vegetable broth - 250 milliliters
- Tomato paste - 1 tablespoon
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and carrot, sautéing until the onion is translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped Savoy cabbage to the pot and stir well to combine with the onion and carrot mixture.
- Pour in the vegetable broth and add the tomato paste, bay leaf, thyme, salt, black pepper, and red pepper flakes (if using).
- Bring the mixture to a boil, then reduce heat to low, cover the pot, and let it simmer for 25-30 minutes until the cabbage is tender.
- Remove the bay leaf before serving, and adjust seasoning to taste.
