  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Vegetable broth - 250 milliliters
  • Tomato paste - 1 tablespoon
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and carrot, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped Savoy cabbage to the pot and stir well to combine with the onion and carrot mixture.
  5. Pour in the vegetable broth and add the tomato paste, bay leaf, thyme, salt, black pepper, and red pepper flakes (if using).
  6. Bring the mixture to a boil, then reduce heat to low, cover the pot, and let it simmer for 25-30 minutes until the cabbage is tender.
  7. Remove the bay leaf before serving, and adjust seasoning to taste.
