Ingredients

  • Brussels sprouts - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon - 1, juiced and zested
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almonds, sliced - 30 grams
  • Parmesan cheese, grated - 20 grams (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Trim the ends of the Brussels sprouts and remove any yellow leaves. Cut them in half lengthwise.
  3. In a large bowl, combine the Brussels sprouts, olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper. Toss well to coat.
  4. Spread the Brussels sprouts on a baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until they are golden brown and tender.
  6. While the Brussels sprouts are roasting, toast the sliced almonds in a dry skillet over medium heat for 3-4 minutes, stirring frequently until golden.
  7. Once the Brussels sprouts are done, remove them from the oven and sprinkle with toasted almonds and grated Parmesan cheese, if using.
  8. Serve warm as a delicious and healthy side dish.
