Ingredients
- Brussels sprouts - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon - 1, juiced and zested
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almonds, sliced - 30 grams
- Parmesan cheese, grated - 20 grams (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Trim the ends of the Brussels sprouts and remove any yellow leaves. Cut them in half lengthwise.
- In a large bowl, combine the Brussels sprouts, olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper. Toss well to coat.
- Spread the Brussels sprouts on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until they are golden brown and tender.
- While the Brussels sprouts are roasting, toast the sliced almonds in a dry skillet over medium heat for 3-4 minutes, stirring frequently until golden.
- Once the Brussels sprouts are done, remove them from the oven and sprinkle with toasted almonds and grated Parmesan cheese, if using.
- Serve warm as a delicious and healthy side dish.
