- Grated Parmesan cheese - 50 grams
- Plain Greek yogurt - 50 grams
- Nutmeg - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 30 grams
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Wash and cut the cauliflower into florets.
- In a pot of boiling salted water, cook the cauliflower florets for about 5-7 minutes until fork-tender. Drain and set aside.
- In a saucepan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the milk, Greek yogurt, nutmeg, salt, and black pepper to the saucepan, stirring until well combined and heated through but not boiling.
- Remove the saucepan from heat and stir in half of the grated Parmesan cheese, mixing until melted and creamy.
- In a baking dish, combine the cooked cauliflower with the cheese sauce, ensuring the florets are well coated.
- In a small bowl, mix the breadcrumbs with the remaining Parmesan cheese and chopped parsley, then sprinkle this mixture evenly over the cauliflower.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.
- Remove from the oven, let cool slightly, and serve warm.
