- Fresh basil - 25 grams
- Capers - 1 tablespoon
- Garlic - 1 clove
- Lemon juice - 2 tablespoons
- Nutritional yeast - 2 tablespoons
Steps
- Preheat the grill to medium-high heat.
- Remove the leaves from the cauliflower and cut it into thick slices (about 2-3 cm each).
- In a bowl, mix olive oil, salt, and black pepper. Brush this mixture onto both sides of the cauliflower slices.
- Place the cauliflower slices on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- While the cauliflower is grilling, prepare the salsa verde: in a food processor, combine parsley, basil, capers, garlic, lemon juice, and nutritional yeast. Pulse until finely chopped.
- With the processor running, slowly drizzle in 2 tablespoons of olive oil until the mixture is smooth. Adjust seasoning with salt to taste.
