Ingredients
- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons (30ml)
- Lemon - 1 (juice and zest)
- Garlic - 2 cloves (minced)
- Salt - 1/2 teaspoon (2g)
- Black pepper - 1/4 teaspoon (1g)
- Fresh parsley - 2 tablespoons (chopped)
Steps
- Cut the cauliflower into florets, ensuring they are roughly the same size for even cooking.
- Fill a pot with water and bring it to a boil. Place a steamer basket over the pot, making sure it doesn't touch the water.
- Add the cauliflower florets to the steamer basket, cover, and steam for 10-12 minutes, or until the cauliflower is tender but still crisp.
- While the cauliflower steams, prepare the dressing by mixing olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper in a small bowl.
- Once the cauliflower is done steaming, remove it from the heat and transfer it to a serving dish.
- Drizzle the prepared dressing over the cauliflower and toss gently to combine.
- Garnish with chopped parsley before serving.
