Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons (30ml)
  • Lemon - 1 (juice and zest)
  • Garlic - 2 cloves (minced)
  • Salt - 1/2 teaspoon (2g)
  • Black pepper - 1/4 teaspoon (1g)
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Cut the cauliflower into florets, ensuring they are roughly the same size for even cooking.
  2. Fill a pot with water and bring it to a boil. Place a steamer basket over the pot, making sure it doesn't touch the water.
  3. Add the cauliflower florets to the steamer basket, cover, and steam for 10-12 minutes, or until the cauliflower is tender but still crisp.
  4. While the cauliflower steams, prepare the dressing by mixing olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper in a small bowl.
  5. Once the cauliflower is done steaming, remove it from the heat and transfer it to a serving dish.
  6. Drizzle the prepared dressing over the cauliflower and toss gently to combine.
  7. Garnish with chopped parsley before serving.
