- Ripe tomatoes - 400 grams (diced)
- Extra virgin olive oil - 2 tablespoons
- Garlic - 2 cloves (minced)
- Fresh basil leaves - 10 grams (chopped)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Grated Parmesan cheese - 20 grams (optional, for serving)
Steps
- Bring a pot of salted water to a boil and cook the cavatappi pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the diced tomatoes, salt, and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes break down and create a sauce.
- Once the pasta is cooked, reserve 1/4 cup of the pasta cooking water, then drain the pasta.
- Add the drained cavatappi to the skillet with the tomato sauce, along with the reserved pasta water. Stir to combine and let cook for another 2-3 minutes.
- Remove from heat and fold in the chopped fresh basil.
- Serve hot, topped with grated Parmesan cheese if desired.
