Ingredients

  • Cavatappi pasta - 150 grams
  • Ripe tomatoes - 400 grams (diced)
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Fresh basil leaves - 10 grams (chopped)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Grated Parmesan cheese - 20 grams (optional, for serving)

Steps

  1. Bring a pot of salted water to a boil and cook the cavatappi pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the diced tomatoes, salt, and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes break down and create a sauce.
  5. Once the pasta is cooked, reserve 1/4 cup of the pasta cooking water, then drain the pasta.
  6. Add the drained cavatappi to the skillet with the tomato sauce, along with the reserved pasta water. Stir to combine and let cook for another 2-3 minutes.
  7. Remove from heat and fold in the chopped fresh basil.
  8. Serve hot, topped with grated Parmesan cheese if desired.
