- Cauliflower - 300 grams
- Almond flour - 100 grams
- Egg - 1 large
- Parmesan cheese, grated - 30 grams
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Canned crushed tomatoes - 200 grams
- Fresh basil leaves - a handful
- Mozzarella cheese, shredded - 50 grams
Steps
- Preheat the oven to 200°C (400°F).
- Steam the cauliflower florets for about 10-15 minutes, or until tender. Drain and let cool slightly.
- Once cooled, blend the cauliflower in a food processor until smooth. Transfer to a bowl.
- Add the almond flour, egg, Parmesan cheese, salt, and pepper to the blended cauliflower. Mix until a dough forms.
- Divide the dough into four portions and roll each portion into a long rope, about 1 cm thick. Cut into small pieces to form gnocchi.
- Bring a pot of salted water to a boil. Cook the gnocchi in batches for 2-3 minutes or until they float to the surface. Remove and drain.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the crushed tomatoes to the skillet and simmer for 5-7 minutes. Stir in fresh basil and season with salt and pepper to taste.
- In a baking dish, layer half of the tomato sauce, followed by the gnocchi, and then top with the remaining sauce. Sprinkle shredded mozzarella on top.
- Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly. Serve hot.
