Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Parmesan cheese, grated - 30 grams
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Canned crushed tomatoes - 200 grams
  • Fresh basil leaves - a handful
  • Mozzarella cheese, shredded - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Steam the cauliflower florets for about 10-15 minutes, or until tender. Drain and let cool slightly.
  3. Once cooled, blend the cauliflower in a food processor until smooth. Transfer to a bowl.
  4. Add the almond flour, egg, Parmesan cheese, salt, and pepper to the blended cauliflower. Mix until a dough forms.
  5. Divide the dough into four portions and roll each portion into a long rope, about 1 cm thick. Cut into small pieces to form gnocchi.
  6. Bring a pot of salted water to a boil. Cook the gnocchi in batches for 2-3 minutes or until they float to the surface. Remove and drain.
  7. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  8. Add the crushed tomatoes to the skillet and simmer for 5-7 minutes. Stir in fresh basil and season with salt and pepper to taste.
  9. In a baking dish, layer half of the tomato sauce, followed by the gnocchi, and then top with the remaining sauce. Sprinkle shredded mozzarella on top.
  10. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly. Serve hot.
