  • Carrots - 400 grams

  • Fresh rosemary - 1 teaspoon, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel the carrots and cut them into uniform sticks, about 1 cm thick.
  3. In a mixing bowl, combine the carrots, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Toss until the carrots are well coated.
  4. Spread the carrots evenly on a baking sheet lined with parchment paper.
  5. Roast the carrots in the preheated oven for 25-30 minutes, turning halfway through, until they are tender and slightly caramelized.
  6. Once roasted, remove the carrots from the oven and drizzle with lemon juice.
  7. Transfer the carrots to a serving platter and sprinkle with toasted pine nuts before serving.
