- Fresh rosemary - 1 teaspoon, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams, toasted
Steps
- Preheat the oven to 200°C (400°F).
- Peel the carrots and cut them into uniform sticks, about 1 cm thick.
- In a mixing bowl, combine the carrots, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Toss until the carrots are well coated.
- Spread the carrots evenly on a baking sheet lined with parchment paper.
- Roast the carrots in the preheated oven for 25-30 minutes, turning halfway through, until they are tender and slightly caramelized.
- Once roasted, remove the carrots from the oven and drizzle with lemon juice.
- Transfer the carrots to a serving platter and sprinkle with toasted pine nuts before serving.
