  • Garlic - 2 cloves, minced
  • Dry red wine - 100 milliliters
  • Vegetable broth - 100 milliliters
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sugar - 1 teaspoon
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Peel the carrots and cut them into sticks or rounds, about 1 cm thick.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the carrots to the saucepan and cook for 5 minutes, stirring occasionally, until they begin to soften.
  4. Pour in the dry red wine and vegetable broth, then add the chopped thyme, salt, black pepper, and sugar. Stir well to combine.
  5. Bring the mixture to a simmer, then reduce the heat to low and cover the pan. Cook for 15-20 minutes, or until the carrots are tender and the liquid has reduced to a glaze.
