- Ground beef (80% lean) - 400 grams
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Fresh basil (chopped) - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Zucchini (sliced into rounds) - 200 grams
- Cherry tomatoes (halved) - 100 grams
- Mozzarella cheese (sliced) - 100 grams
- Fresh arugula - 50 grams
- Balsamic vinegar - 1 tablespoon
Steps
- In a large bowl, combine the ground beef with garlic powder, dried oregano, chopped basil, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal-sized patties, about 2 cm thick.
- Preheat a grill or grill pan over medium-high heat and brush with olive oil.
- Grill the patties for about 5-6 minutes on each side for medium doneness, or until cooked to your preference.
- While the burgers are grilling, toss the zucchini rounds and cherry tomatoes with a little olive oil, salt, and pepper. Grill them for about 3-4 minutes until tender and slightly charred.
- During the last minute of grilling, place a slice of mozzarella cheese on each patty to melt.
- To serve, place the grilled patties on a plate, top with grilled zucchini, cherry tomatoes, and a handful of fresh arugula. Drizzle with balsamic vinegar and enjoy.
