Steps
- Clean the artichokes by removing the tough outer leaves and trimming the stems, then cut them into quarters and remove the fuzzy choke in the center.
- In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder.
- Gradually add the water to the dry ingredients, whisking until a smooth batter forms.
- Heat olive oil in a deep frying pan over medium heat until it reaches 180°C (350°F).
- Dip each artichoke quarter into the batter, allowing any excess to drip off, then carefully place them into the hot oil.
- Fry the artichokes in batches for about 4-5 minutes or until they are golden brown and crispy, flipping them halfway through for even cooking.
- Remove the fried artichokes with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
