  • Water - 150 ml

Steps

  1. Clean the artichokes by removing the tough outer leaves and trimming the stems, then cut them into quarters and remove the fuzzy choke in the center.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder.
  3. Gradually add the water to the dry ingredients, whisking until a smooth batter forms.
  4. Heat olive oil in a deep frying pan over medium heat until it reaches 180°C (350°F).
  5. Dip each artichoke quarter into the batter, allowing any excess to drip off, then carefully place them into the hot oil.
  6. Fry the artichokes in batches for about 4-5 minutes or until they are golden brown and crispy, flipping them halfway through for even cooking.
  7. Remove the fried artichokes with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Serve hot with lemon wedges on the side for squeezing over the fried artichokes.
