Ingredients

  • Globe artichokes - 2 whole
  • Lemon - 1 for juice
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic - 1 clove, minced
  • Olive oil - 500 ml (for frying)
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Fill a large bowl with water and squeeze the juice of half a lemon into it to prevent the artichokes from browning.
  2. Trim the stems of the artichokes and remove any tough outer leaves until you reach the tender inner leaves.
  3. Cut the top inch off the artichokes and use a spoon to scoop out the fuzzy choke in the center.
  4. Place the prepared artichokes in the lemon water to keep them from browning while you work.
  5. In a large pot, heat the olive oil to 180°C (350°F).
  6. Carefully remove the artichokes from the water, shake off excess water, and sprinkle salt and black pepper inside and outside the artichokes.
  7. Using a slotted spoon, gently lower the artichokes into the hot oil, cut side down, and fry for about 10-12 minutes until golden brown and crispy.
  8. Turn the artichokes over and continue to fry for another 5-7 minutes until the other side is also golden brown.
  9. Carefully remove the artichokes from the oil and place them on a plate lined with paper towels to drain excess oil.
  10. Sprinkle the minced garlic and chopped parsley over the fried artichokes, serve hot with a wedge of lemon on the side.
