Ingredients
- Globe artichokes - 2 whole
- Lemon - 1 for juice
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic - 1 clove, minced
- Olive oil - 500 ml (for frying)
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Fill a large bowl with water and squeeze the juice of half a lemon into it to prevent the artichokes from browning.
- Trim the stems of the artichokes and remove any tough outer leaves until you reach the tender inner leaves.
- Cut the top inch off the artichokes and use a spoon to scoop out the fuzzy choke in the center.
- Place the prepared artichokes in the lemon water to keep them from browning while you work.
- In a large pot, heat the olive oil to 180°C (350°F).
- Carefully remove the artichokes from the water, shake off excess water, and sprinkle salt and black pepper inside and outside the artichokes.
- Using a slotted spoon, gently lower the artichokes into the hot oil, cut side down, and fry for about 10-12 minutes until golden brown and crispy.
- Turn the artichokes over and continue to fry for another 5-7 minutes until the other side is also golden brown.
- Carefully remove the artichokes from the oil and place them on a plate lined with paper towels to drain excess oil.
- Sprinkle the minced garlic and chopped parsley over the fried artichokes, serve hot with a wedge of lemon on the side.
