Ingredients
- Globe artichokes - 2
- Lemon juice - 30 ml
- Garlic - 2 cloves, minced
- Olive oil - 30 ml
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Fresh parsley - 2 tbsp, chopped
- Water - 500 ml
Steps
- Fill a large pot with water and add the juice of one lemon along with the salt. Bring to a boil.
- While the water is heating, prepare the artichokes by trimming the stems and removing the tough outer leaves. Cut the top inch off each artichoke and scoop out the fuzzy choke with a spoon.
- Once the water is boiling, add the prepared artichokes and cook for about 15 minutes until tender. Remove and let them cool slightly.
- In a small bowl, mix the minced garlic, olive oil, black pepper, and remaining lemon juice.
- Preheat your grill to medium-high heat. Once the artichokes are cool enough to handle, cut them in half lengthwise and brush the insides with the garlic oil mixture.
- Place the artichokes cut side down on the grill. Grill for about 5-7 minutes until they are nicely charred.
- Flip the artichokes over and grill for another 5 minutes. Remove from the grill and sprinkle with fresh parsley before serving.
