Ingredients
- Cherry tomatoes - 200 grams
- Fresh mozzarella balls - 200 grams
- Fresh basil leaves - 10 leaves
- Extra virgin olive oil - 1 tablespoon
- Balsamic vinegar - 2 tablespoons
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Skewers - 4 (6-inch)
Steps
- Start by preparing the balsamic reduction. In a small saucepan, combine the balsamic vinegar and heat over medium heat until it starts to simmer. Reduce the heat to low and let it simmer for about 5-7 minutes, or until it thickens slightly. Remove from heat and let it cool.
- While the balsamic reduction is cooling, rinse the cherry tomatoes and basil leaves under cold water. Pat them dry with a paper towel.
- Next, assemble the skewers. Take a skewer and thread on one cherry tomato, followed by a basil leaf, then a mozzarella ball. Repeat this pattern until the skewer is filled, typically 2-3 times per skewer.
- Once all skewers are assembled, drizzle them with olive oil and sprinkle with salt and black pepper to taste.
- Finally, drizzle the cooled balsamic reduction over the skewers just before serving.
