  • Fresh basil leaves - 10 leaves
  • Extra virgin olive oil - 1 tablespoon
  • Balsamic vinegar - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (6-inch)

Steps

  1. Start by preparing the balsamic reduction. In a small saucepan, combine the balsamic vinegar and heat over medium heat until it starts to simmer. Reduce the heat to low and let it simmer for about 5-7 minutes, or until it thickens slightly. Remove from heat and let it cool.
  2. While the balsamic reduction is cooling, rinse the cherry tomatoes and basil leaves under cold water. Pat them dry with a paper towel.
  3. Next, assemble the skewers. Take a skewer and thread on one cherry tomato, followed by a basil leaf, then a mozzarella ball. Repeat this pattern until the skewer is filled, typically 2-3 times per skewer.
