  • Cherry tomatoes - 100 grams, halved
  • Green olives - 50 grams, pitted and chopped
  • Capers - 1 tablespoon, rinsed
  • Fresh basil - 10 grams, chopped
  • Red wine vinegar - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add diced eggplant and zucchini to the skillet, sautéing for about 5-7 minutes until they soften and start to brown.
  3. Stir in the chopped onion and minced garlic, cooking for an additional 3 minutes until the onion becomes translucent.
  4. Add the diced red bell pepper and cherry tomatoes, cooking for another 5 minutes until the tomatoes soften.
