- Almond flour - 50 grams
- Baking powder - 1 teaspoon
- Granulated sugar - 100 grams
- Almonds - 100 grams, whole and unsalted
- Plant-based milk - 60 ml (e.g., almond or soy milk)
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, almond flour, baking powder, sugar, and salt, and mix well.
- Add the plant-based milk and vanilla extract to the dry ingredients, and mix until a dough forms.
- Fold in the whole almonds until evenly distributed throughout the dough.
- Shape the dough into a log, approximately 25 cm long and 5 cm wide, and place it on the prepared baking sheet.
- Bake in the preheated oven for 25 minutes, or until the log is golden brown.
- Remove from the oven and let it cool for about 10 minutes, then slice the log into 1 cm thick pieces.
- Lay the sliced pieces flat on the baking sheet and return to the oven to bake for an additional 10-15 minutes until crisp and golden.
- Remove from the oven and let cool completely before serving.
