Ingredients

  • All-purpose flour - 150 grams
  • Almond flour - 50 grams
  • Baking powder - 1 teaspoon
  • Granulated sugar - 100 grams
  • Almonds - 100 grams, whole and unsalted
  • Plant-based milk - 60 ml (e.g., almond or soy milk)
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, almond flour, baking powder, sugar, and salt, and mix well.
  3. Add the plant-based milk and vanilla extract to the dry ingredients, and mix until a dough forms.
  4. Fold in the whole almonds until evenly distributed throughout the dough.
  5. Shape the dough into a log, approximately 25 cm long and 5 cm wide, and place it on the prepared baking sheet.
  6. Bake in the preheated oven for 25 minutes, or until the log is golden brown.
  7. Remove from the oven and let it cool for about 10 minutes, then slice the log into 1 cm thick pieces.
  8. Lay the sliced pieces flat on the baking sheet and return to the oven to bake for an additional 10-15 minutes until crisp and golden.
  9. Remove from the oven and let cool completely before serving.
