Ingredients

  • Almond flour - 150 grams
  • Sugar - 100 grams
  • Eggs - 2 large
  • Almonds, whole - 80 grams
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the eggs and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Fold in the whole almonds until evenly distributed.
  6. Shape the dough into a log about 25 cm long and 5 cm wide on the prepared baking sheet.
  7. Bake in the preheated oven for 25 minutes or until golden brown.
  8. Remove from the oven and let it cool for about 10 minutes.
  9. Slice the log diagonally into 1.5 cm thick pieces.
  10. Return the slices to the baking sheet and bake for an additional 10 minutes, flipping halfway through, until crisp.
  11. Let cool completely before serving.
