- Almond flour - 150 grams
- Sugar - 100 grams
- Eggs - 2 large
- Almonds, whole - 80 grams
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, sugar, baking powder, and salt.
- In another bowl, whisk the eggs and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Fold in the whole almonds until evenly distributed.
- Shape the dough into a log about 25 cm long and 5 cm wide on the prepared baking sheet.
- Bake in the preheated oven for 25 minutes or until golden brown.
- Remove from the oven and let it cool for about 10 minutes.
- Slice the log diagonally into 1.5 cm thick pieces.
- Return the slices to the baking sheet and bake for an additional 10 minutes, flipping halfway through, until crisp.
- Let cool completely before serving.
