Ingredients

  • All-purpose flour - 125g
  • Granulated sugar - 15g
  • Unsalted butter - 25g, melted
  • Egg - 1, beaten
  • White wine or vinegar - 30ml
  • Ricotta cheese - 250g, drained
  • Powdered sugar - 50g
  • Vanilla extract - 1 tsp
  • Mini chocolate chips - 30g
  • Pistachios - 30g, chopped (optional)
  • Cinnamon - 1/2 tsp
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine the flour, granulated sugar, and a pinch of salt. Mix well.
  2. Add the melted butter, beaten egg, and white wine or vinegar to the dry ingredients. Knead the mixture until it forms a smooth dough. Wrap in plastic and refrigerate for at least 30 minutes.
  3. While the dough is resting, prepare the filling. In a bowl, combine the drained ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips. Mix until smooth and creamy.
  4. Once the dough is chilled, roll it out on a floured surface until thin (about 1-2 mm). Cut out circles of about 10 cm in diameter.
  5. Wrap each circle around a cannoli tube, sealing the edges with a bit of water. Ensure the seam is on the bottom to avoid opening during frying.
  6. Heat vegetable oil in a deep pan to 180°C (350°F). Fry the cannoli shells in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.
  7. Let the shells cool completely before removing them from the tubes.
  8. Once cooled, fill each shell with the ricotta mixture using a piping bag or a spoon. Dust with powdered sugar and garnish with chopped pistachios if desired.
