- All-purpose flour - 125g
- Granulated sugar - 15g
- Unsalted butter - 25g, melted
- Egg - 1, beaten
- White wine or vinegar - 30ml
- Ricotta cheese - 250g, drained
- Powdered sugar - 50g
- Vanilla extract - 1 tsp
- Mini chocolate chips - 30g
- Pistachios - 30g, chopped (optional)
- Cinnamon - 1/2 tsp
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the flour, granulated sugar, and a pinch of salt. Mix well.
- Add the melted butter, beaten egg, and white wine or vinegar to the dry ingredients. Knead the mixture until it forms a smooth dough. Wrap in plastic and refrigerate for at least 30 minutes.
- While the dough is resting, prepare the filling. In a bowl, combine the drained ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips. Mix until smooth and creamy.
- Once the dough is chilled, roll it out on a floured surface until thin (about 1-2 mm). Cut out circles of about 10 cm in diameter.
- Wrap each circle around a cannoli tube, sealing the edges with a bit of water. Ensure the seam is on the bottom to avoid opening during frying.
- Heat vegetable oil in a deep pan to 180°C (350°F). Fry the cannoli shells in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.
- Let the shells cool completely before removing them from the tubes.
- Once cooled, fill each shell with the ricotta mixture using a piping bag or a spoon. Dust with powdered sugar and garnish with chopped pistachios if desired.
