Ingredients

  • Cannelloni pasta - 8 tubes
  • Ricotta cheese - 250 grams
  • Fresh spinach - 150 grams
  • Parmesan cheese (grated) - 50 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Egg - 1 large
  • Garlic - 1 clove (minced)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Tomato sauce - 300 grams
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until wilted, approximately 3-4 minutes. Remove from heat and let it cool.
  4. In a mixing bowl, combine the ricotta cheese, cooked spinach, grated Parmesan cheese, egg, salt, black pepper, and a pinch of nutmeg. Mix until well combined.
  5. Using a spoon, carefully fill each cannelloni tube with the ricotta and spinach mixture.
  6. Spread half of the tomato sauce on the bottom of a baking dish. Arrange the filled cannelloni on top of the sauce.
  7. Pour the remaining tomato sauce over the cannelloni and sprinkle the shredded mozzarella cheese on top.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.
