- Granulated sugar - 75 g
- Baking powder - 1 tsp
- Salt - 1/4 tsp
- Eggs - 1 large
- Vanilla extract - 1 tsp
- Whole almonds - 50 g
- Zest of 1 orange
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, mix the almond flour, all-purpose flour, sugar, baking powder, and salt until combined.
- In a separate bowl, whisk together the egg, vanilla extract, and orange zest until well blended.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Fold in the whole almonds until evenly distributed.
- Shape the dough into a log about 25 cm long and 5 cm wide, placing it on the prepared baking sheet.
- Bake for 20 minutes or until lightly golden, then remove from the oven and let cool for 10 minutes.
- Slice the log into 1 cm thick biscotti pieces and place them cut side down back on the baking sheet.
- Bake for an additional 10 minutes, flipping halfway through, until crisp.
- Allow the biscotti to cool completely before serving with espresso.
