Ingredients

  • Caciocavallo Podolico cheese - 200 grams
  • Extra virgin olive oil - 2 tablespoons
  • Fresh rosemary - 1 teaspoon, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Black pepper - to taste
  • Sea salt - a pinch
  • Whole grain bread - 2 slices

Steps

  1. Preheat a grill pan or outdoor grill over medium heat.
  2. Slice the Caciocavallo Podolico cheese into 1 cm thick slices.
  3. Brush both sides of the cheese slices with extra virgin olive oil.
  4. Sprinkle chopped rosemary, thyme, black pepper, and a pinch of sea salt on one side of each cheese slice.
  5. Place the cheese slices on the grill and cook for about 3-4 minutes on each side, until golden and slightly melted.
  6. While the cheese is grilling, toast the whole grain bread slices on the grill until crispy.
  7. Once the cheese is ready, remove it from the grill and let it rest for a minute.
  8. Serve the grilled Caciocavallo on the toasted bread, drizzled with a little more olive oil and garnished with additional herbs if desired.
