- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Tomatoes - 400 grams, diced (canned or fresh)
- Vegetable broth - 500 ml
- Canned chickpeas - 200 grams, drained and rinsed
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Crusty bread - 2 slices for serving
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the diced zucchini and red bell pepper, and continue to cook for another 5 minutes.
- Add the diced tomatoes and vegetable broth to the pot. Bring to a simmer.
- Stir in the chickpeas and season with salt and black pepper. Let the stew simmer for 15-20 minutes, allowing the flavors to meld.
- Once cooked, stir in the chopped parsley before serving.
- Serve the Cacciucco Vegetariano hot with crusty bread on the side.
