  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Vegetable broth - 500 ml
  • Canned chickpeas - 200 grams, drained and rinsed
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Crusty bread - 2 slices for serving

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the diced zucchini and red bell pepper, and continue to cook for another 5 minutes.
  4. Add the diced tomatoes and vegetable broth to the pot. Bring to a simmer.
  5. Stir in the chickpeas and season with salt and black pepper. Let the stew simmer for 15-20 minutes, allowing the flavors to meld.
  6. Once cooked, stir in the chopped parsley before serving.
  7. Serve the Cacciucco Vegetariano hot with crusty bread on the side.
