  • Fresh parsley, chopped - 2 tablespoons
  • Red snapper fillets - 150 grams, cut into chunks
  • Shrimp, peeled and deveined - 150 grams
  • Mussels, cleaned - 200 grams
  • Crusty bread - for serving

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the minced garlic, diced onion, carrot, and celery, and sauté until the vegetables soften, about 5 minutes.
  2. Stir in the canned diced tomatoes, fish stock, paprika, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes to allow the flavors to meld.
  3. Add the red snapper chunks and shrimp to the pot, and gently simmer for another 5 minutes.
  4. Finally, add the cleaned mussels, cover the pot, and cook for an additional 5-7 minutes, or until the mussels have opened.
  5. Stir in the chopped parsley and adjust seasoning if necessary. Serve the cacciucco hot, accompanied by crusty bread for dipping.
