- Red snapper fillets - 150 grams, cut into chunks
- Shrimp, peeled and deveined - 150 grams
- Mussels, cleaned - 200 grams
- Crusty bread - for serving
Steps
- In a medium pot, heat the olive oil over medium heat. Add the minced garlic, diced onion, carrot, and celery, and sauté until the vegetables soften, about 5 minutes.
- Stir in the canned diced tomatoes, fish stock, paprika, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes to allow the flavors to meld.
- Add the red snapper chunks and shrimp to the pot, and gently simmer for another 5 minutes.
- Finally, add the cleaned mussels, cover the pot, and cook for an additional 5-7 minutes, or until the mussels have opened.
- Stir in the chopped parsley and adjust seasoning if necessary. Serve the cacciucco hot, accompanied by crusty bread for dipping.
