Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Canned diced tomatoes - 400 grams
  • Red wine - 100 ml
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili flakes - 1/4 teaspoon

Steps

  1. In a large bowl, combine the chicken thighs with olive oil, salt, pepper, and chili flakes. Allow to marinate for at least 30 minutes.
  2. Heat a grill or grill pan over medium heat and cook the marinated chicken thighs for about 6-7 minutes on each side, until browned and cooked through.
  3. While the chicken is grilling, heat a skillet over medium heat and add olive oil. Sauté the chopped onion and minced garlic until translucent.
  4. Add the sliced bell pepper and carrot to the skillet, cooking until softened, about 5 minutes.
  5. Pour in the diced tomatoes and red wine, and stir in the chopped rosemary and thyme. Simmer for 10-15 minutes until the sauce thickens slightly.
  6. Once the chicken is done, remove it from the grill and let it rest for a few minutes before slicing.
  7. Serve the grilled chicken over the vegetable sauce, garnished with additional herbs if desired.
