- Chicken thighs - 400 grams
- Olive oil - 2 tablespoons
- Red onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, sliced
- Canned diced tomatoes - 400 grams
- Red wine - 100 ml
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili flakes - 1/4 teaspoon
Steps
- In a large bowl, combine the chicken thighs with olive oil, salt, pepper, and chili flakes. Allow to marinate for at least 30 minutes.
- Heat a grill or grill pan over medium heat and cook the marinated chicken thighs for about 6-7 minutes on each side, until browned and cooked through.
- While the chicken is grilling, heat a skillet over medium heat and add olive oil. Sauté the chopped onion and minced garlic until translucent.
- Add the sliced bell pepper and carrot to the skillet, cooking until softened, about 5 minutes.
- Pour in the diced tomatoes and red wine, and stir in the chopped rosemary and thyme. Simmer for 10-15 minutes until the sauce thickens slightly.
- Once the chicken is done, remove it from the grill and let it rest for a few minutes before slicing.
- Serve the grilled chicken over the vegetable sauce, garnished with additional herbs if desired.
