Ingredients

  • Zucchini - 250 grams
  • Almond flour - 50 grams
  • Parmesan cheese, grated - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil, chopped - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Mozzarella cheese, sliced - 2 slices (optional for serving)

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel; twist the towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, almond flour, grated Parmesan cheese, egg, garlic powder, dried oregano, salt, black pepper, and chopped basil. Mix until well combined.
  3. Form the mixture into two equal burger patties.
  4. Heat one tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the zucchini patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. In the last minute of cooking, place a slice of mozzarella cheese on each patty, cover the skillet, and let the cheese melt.
  6. Remove the burgers from the skillet and let them rest for a minute. Serve with a drizzle of olive oil and fresh basil if desired.
