- Egg - 1 large
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil, chopped - 2 tablespoons
- Olive oil - 2 tablespoons
- Mozzarella cheese, sliced - 2 slices (optional for serving)
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel; twist the towel to squeeze out excess moisture.

- Heat one tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the zucchini patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- In the last minute of cooking, place a slice of mozzarella cheese on each patty, cover the skillet, and let the cheese melt.
- Remove the burgers from the skillet and let them rest for a minute. Serve with a drizzle of olive oil and fresh basil if desired.
