Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Almond flour - 50 grams
  • Parmesan cheese, grated - 30 grams
  • Egg - 1 large
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini, sliced - 100 grams (for serving)
  • Cherry tomatoes, halved - 100 grams (for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a food processor, add the white fish fillets, almond flour, grated Parmesan cheese, egg, minced garlic, chopped parsley, lemon juice, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  3. Form the fish mixture into two burger patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 3-4 minutes on each side, until golden brown and cooked through.
  5. While the patties are cooking, toss the sliced zucchini and halved cherry tomatoes with the remaining olive oil, salt, and pepper. Spread them out on a baking tray.
  6. Roast the vegetables in the oven for about 10 minutes, or until tender.
  7. Serve the fish burgers on a plate with the roasted zucchini and cherry tomatoes on the side.
