- Eggplant - 300 grams
- Parmesan cheese - 50 grams, grated
- Almond flour - 30 grams
- Garlic - 1 clove, minced
- Egg - 1 large
- Fresh basil - 20 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Basil pesto - 50 grams, for serving
Steps
- Preheat your grill or skillet over medium heat.
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for about 10 minutes to draw out moisture.
- Rinse and pat the eggplant dry with a paper towel.
- In a large bowl, combine the dried eggplant, grated Parmesan cheese, almond flour, minced garlic, chopped basil, egg, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties.
- Brush both sides of each patty with olive oil.
- Grill the patties for about 5-6 minutes on each side, or until golden brown and cooked through.
- Meanwhile, in a small bowl, toss the halved cherry tomatoes with a drizzle of olive oil, salt, and pepper.
- Serve the eggplant burgers topped with basil pesto and accompanied by the seasoned cherry tomatoes.
