Ingredients

  • Eggplant - 300 grams
  • Parmesan cheese - 50 grams, grated
  • Almond flour - 30 grams
  • Garlic - 1 clove, minced
  • Egg - 1 large
  • Fresh basil - 20 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Basil pesto - 50 grams, for serving

Steps

  1. Preheat your grill or skillet over medium heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for about 10 minutes to draw out moisture.
  3. Rinse and pat the eggplant dry with a paper towel.
  4. In a large bowl, combine the dried eggplant, grated Parmesan cheese, almond flour, minced garlic, chopped basil, egg, salt, and black pepper. Mix until well combined.
  5. Form the mixture into two patties.
  6. Brush both sides of each patty with olive oil.
  7. Grill the patties for about 5-6 minutes on each side, or until golden brown and cooked through.
  8. Meanwhile, in a small bowl, toss the halved cherry tomatoes with a drizzle of olive oil, salt, and pepper.
  9. Serve the eggplant burgers topped with basil pesto and accompanied by the seasoned cherry tomatoes.
