Ingredients

  • Canned cannellini beans - 1 cup (240g)
  • Cooked quinoa - 1/2 cup (90g)
  • Grated carrot - 1/4 cup (30g)
  • Chopped fresh parsley - 2 tablespoons
  • Minced garlic - 1 clove
  • Olive oil - 2 tablespoons
  • Whole wheat breadcrumbs - 1/2 cup (50g)
  • Nutritional yeast - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, mash the cannellini beans with a fork until mostly smooth but still slightly chunky.
  3. Add the cooked quinoa, grated carrot, chopped parsley, minced garlic, olive oil, nutritional yeast, oregano, salt, pepper, and lemon juice to the mashed beans. Mix until well combined.
  4. Gradually add the whole wheat breadcrumbs until the mixture holds together but is not too dry.
  5. Form the mixture into two patties, about 1.5 cm thick.
  6. Place the patties on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through, until they are golden brown.
  7. While the patties are baking, prepare your burger buns by toasting them lightly, if desired.
  8. Assemble the burgers by placing a bean patty on each bun, topping with lettuce and tomato slices.
  9. Serve immediately and enjoy your Burgers di Fagioli!
