- Canned cannellini beans - 1 cup (240g)
- Cooked quinoa - 1/2 cup (90g)
- Grated carrot - 1/4 cup (30g)
- Chopped fresh parsley - 2 tablespoons
- Minced garlic - 1 clove
- Olive oil - 2 tablespoons
- Whole wheat breadcrumbs - 1/2 cup (50g)
- Nutritional yeast - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
Steps
- Preheat your oven to 200°C (400°F).
- In a large mixing bowl, mash the cannellini beans with a fork until mostly smooth but still slightly chunky.
- Add the cooked quinoa, grated carrot, chopped parsley, minced garlic, olive oil, nutritional yeast, oregano, salt, pepper, and lemon juice to the mashed beans. Mix until well combined.
- Gradually add the whole wheat breadcrumbs until the mixture holds together but is not too dry.
- Form the mixture into two patties, about 1.5 cm thick.
- Place the patties on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through, until they are golden brown.
- While the patties are baking, prepare your burger buns by toasting them lightly, if desired.
- Assemble the burgers by placing a bean patty on each bun, topping with lettuce and tomato slices.
- Serve immediately and enjoy your Burgers di Fagioli!
