- Zucchini - 200 grams, grated
- Chickpea flour - 50 grams
- Parmesan cheese - 30 grams, grated
- Egg - 1 large, beaten
- Garlic - 1 clove, minced
- Fresh basil - 10 grams, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Whole wheat burger buns - 2
- Romaine lettuce - 2 leaves
- Tomato - 1, sliced
- Red onion - 1/4, thinly sliced
Steps
- Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- In a mixing bowl, combine the grated zucchini, chickpea flour, grated Parmesan cheese, beaten egg, minced garlic, chopped basil, salt, and pepper. Mix until well combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Once the skillet is hot, add the zucchini patties and cook for 5-6 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, toast the whole wheat burger buns in a separate skillet or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a zucchini patty, slices of tomato, and red onion. Top with the other half of the bun.
