Ingredients

  • Zucchini - 200 grams, grated
  • Chickpea flour - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large, beaten
  • Garlic - 1 clove, minced
  • Fresh basil - 10 grams, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Whole wheat burger buns - 2
  • Romaine lettuce - 2 leaves
  • Tomato - 1, sliced
  • Red onion - 1/4, thinly sliced

Steps

  1. Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  2. In a mixing bowl, combine the grated zucchini, chickpea flour, grated Parmesan cheese, beaten egg, minced garlic, chopped basil, salt, and pepper. Mix until well combined.
  3. Form the mixture into two patties, about 1.5 cm thick.
  4. Once the skillet is hot, add the zucchini patties and cook for 5-6 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, toast the whole wheat burger buns in a separate skillet or toaster.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a zucchini patty, slices of tomato, and red onion. Top with the other half of the bun.
