- Halal ground beef - 250 grams
- Eggplant - 1 medium, sliced into 1 cm rounds

- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Mozzarella cheese - 50 grams, sliced
- Burger buns - 2
- Tomato - 1 medium, sliced
- Ruccola (arugula) - 20 grams
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat your grill or grill pan over medium heat.
- Brush the sliced eggplant with olive oil, and sprinkle with salt and black pepper.
- Grill the eggplant slices for about 4-5 minutes on each side until tender and slightly charred.
- In a mixing bowl, combine the ground beef, minced garlic, chopped basil, salt, and pepper. Form the mixture into two patties.
- Grill the beef patties for about 5-7 minutes on each side, or until they reach your desired doneness.
- In the last minute of grilling, place a slice of mozzarella cheese on each patty to melt.
- To assemble, place the grilled patty with melted cheese on the bottom half of each burger bun.
- Top with grilled eggplant, fresh tomato slices, and a handful of ruccola.
- Drizzle with balsamic vinegar before placing the top half of the bun on the burger. Serve immediately.
