Ingredients

  • Halal ground beef - 250 grams
  • Eggplant - 1 medium, sliced into 1 cm rounds

  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Mozzarella cheese - 50 grams, sliced
  • Burger buns - 2
  • Tomato - 1 medium, sliced
  • Ruccola (arugula) - 20 grams
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Brush the sliced eggplant with olive oil, and sprinkle with salt and black pepper.
  3. Grill the eggplant slices for about 4-5 minutes on each side until tender and slightly charred.
  4. In a mixing bowl, combine the ground beef, minced garlic, chopped basil, salt, and pepper. Form the mixture into two patties.
  5. Grill the beef patties for about 5-7 minutes on each side, or until they reach your desired doneness.
  6. In the last minute of grilling, place a slice of mozzarella cheese on each patty to melt.
  7. To assemble, place the grilled patty with melted cheese on the bottom half of each burger bun.
  8. Top with grilled eggplant, fresh tomato slices, and a handful of ruccola.
  9. Drizzle with balsamic vinegar before placing the top half of the bun on the burger. Serve immediately.
