- Red onion - 50 g (1/4 cup, finely chopped)
- Italian seasoning - 5 g (1 tsp)
- Egg - 1 large
- Breadcrumbs - 50 g (1/2 cup)
- Olive oil - 30 ml (2 tbsp)
- Salt - 2 g (1/2 tsp)
- Black pepper - 1 g (1/4 tsp)
- Burger buns - 2 pieces
- Lettuce - 30 g (for topping)
- Tomato - 1 medium (sliced)
- Avocado - 1/2 (sliced)
Steps
- Drain and rinse the canned cannellini beans, then place them in a large mixing bowl.
- Mash the beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the chopped parsley, minced garlic, chopped red onion, Italian seasoning, egg, breadcrumbs, salt, and black pepper to the mashed beans. Mix well until combined.
- Form the mixture into two equal-sized patties.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for 5-7 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly on another skillet or in a toaster.
- Assemble the burgers by placing the cooked patties on the bottom half of each bun. Top with lettuce, tomato slices, and avocado slices.
- Cover with the top half of the bun and serve immediately.
