  • Fresh parsley - 15 g (1/2 cup, chopped)
  • Garlic - 1 clove (minced)
  • Red onion - 50 g (1/4 cup, finely chopped)
  • Italian seasoning - 5 g (1 tsp)
  • Egg - 1 large
  • Breadcrumbs - 50 g (1/2 cup)
  • Olive oil - 30 ml (2 tbsp)
  • Salt - 2 g (1/2 tsp)
  • Black pepper - 1 g (1/4 tsp)
  • Burger buns - 2 pieces
  • Lettuce - 30 g (for topping)
  • Tomato - 1 medium (sliced)
  • Avocado - 1/2 (sliced)

Steps

  1. Drain and rinse the canned cannellini beans, then place them in a large mixing bowl.
  2. Mash the beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  3. Add the chopped parsley, minced garlic, chopped red onion, Italian seasoning, egg, breadcrumbs, salt, and black pepper to the mashed beans. Mix well until combined.
  4. Form the mixture into two equal-sized patties.
  5. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for 5-7 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly on another skillet or in a toaster.
  7. Assemble the burgers by placing the cooked patties on the bottom half of each bun. Top with lettuce, tomato slices, and avocado slices.
  8. Cover with the top half of the bun and serve immediately.
