Ingredients

  • Ground beef - 300g
  • Fresh mozzarella - 100g
  • Zucchini - 2 medium
  • Fresh basil - 10g
  • Garlic - 1 clove, minced
  • Oregano - 1 tsp
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Olive oil - 2 tbsp
  • Cherry tomatoes - 100g, halved

Steps

  1. Preheat the grill or a skillet over medium-high heat.
  2. Slice the zucchini lengthwise into 1 cm thick slices and brush both sides with olive oil. Grill or pan-fry them for about 3-4 minutes per side until tender and slightly charred. Set aside.
  3. In a bowl, mix the ground beef with minced garlic, oregano, salt, and black pepper until well combined.
  4. Form the mixture into two patties, about 150g each, and make a slight indentation in the center to prevent them from puffing up while cooking.
  5. Cook the patties on the grill or skillet for about 5-6 minutes on each side for medium doneness, or until they reach your desired doneness.
  6. During the last minute of cooking, place a slice of fresh mozzarella on each patty and cover to melt the cheese.
  7. Assemble the burgers by placing each patty between two slices of grilled zucchini. Top with fresh basil and halved cherry tomatoes before serving.
